When it comes to senior living, there are a few factors always to consider. One of the main considerations should be food and the overall dining experience. I am always careful with the amount of salt used in my dishes. I’ve found flavor can be added using lots of fresh herbs instead of salt. One thing I always keep in mind when cooking for my residents is paying attention to the nine allergens.
If a health-conscious resident were to ask me to suggest an entrée, it would be vegan jambalaya with soy vegan chorizo. You get protein from vegan chorizo, nutrients from vegetables, whole grains from brown rice, and healthy ingredients with identical flavors.
An item on my menu that focuses on nutrition is Greek artichoke salad. I would suggest hard-boiled eggs, yogurt parfait with fresh fruit, and black bean burgers for residents needing to gain weight.
When dining out, I like to eat the signature house dish I can’t find anywhere else. Healthy snacking is essential. A healthy snack option is hummus and pita chips. You get protein from the chickpeas and crunch from the pita chips. My one guilty pleasure is a snack custard pie.
