In my kitchen, from-scratch cooking means slowing down and choosing intention over convenience. I start with whole ingredients and transform them by hand. That process creates meals that feel personal and carefully prepared.

Fresh ingredients support resident health by preserving nutrients and allowing natural flavors to shine. When ingredients remain close to their original form, they offer better quality and stronger taste. As a result, residents enjoy meals that are both vibrant and nourishing.

Adapting for Wellness and Familiarity

I adapt meals by starting with what residents already enjoy. From there, I build dishes that feel familiar while still supporting nutrition. Scratch cooking allows me to control sodium, sugar, and texture. At the same time, I enhance flavor through herbs, technique, and high-quality ingredients.

We balance comfort foods with fresh, lighter options. Rather than eliminating favorites, we prepare them from scratch using better ingredients and thoughtful techniques. By reducing excess sodium, sugar, and fat, we create meals that remain satisfying yet nourishing.

One resident favorite that reflects this philosophy is Strawberry Mozzarella Salad with Fennel and Toasted Pistachios. The dish feels bright and seasonal while still offering balance and texture.

Strawberry Mozzarella Salad with Fennel and Toasted Pistachios

Ingredients

For the Salad

1 lb fresh strawberries, hulled and sliced
8 oz fresh mozzarella pearls or torn into bite-sized pieces
1 small fennel bulb, thinly shaved reserve fronds for garnish
⅓ cup shelled pistachios, lightly toasted and roughly chopped
3 to 4 cups baby arugula or mixed spring greens optional
Freshly cracked black pepper, to taste
Pinch of flaky sea salt

For the White Balsamic Vinaigrette

3 tbsp white balsamic vinegar
1 tsp Dijon mustard
1 to 2 tsp honey adjust to taste
¼ cup extra virgin olive oil
1 tbsp finely minced shallot optional
Salt and freshly ground black pepper, to taste

Instructions

Prepare the vinaigrette
Whisk together white balsamic vinegar, Dijon mustard, honey, and shallot. Slowly drizzle in olive oil while whisking until emulsified. Season with salt and pepper.

Toast the pistachios
Heat a dry skillet over medium heat. Toast pistachios for 2 to 3 minutes until fragrant. Cool slightly and chop.

Assemble the salad
Layer greens if using, strawberries, shaved fennel, and mozzarella on a platter. Sprinkle with toasted pistachios.

Dress and finish
Drizzle lightly with vinaigrette just before serving. Finish with flaky sea salt, cracked pepper, and fennel fronds.
